Make Ahead Brunch Menu

Previously, I posted the decorations from the Galentine’s Day brunch I hosted to celebrate lady friendships. Today I want to share with you the easy make ahead menu to make things a little more stress free. In case you missed it, Galentine’s Day is February 13th according to Leslie Knope from the show Parks and Recs to celebrate the ladies in our lives. We celebrated a little late but there is never a bad time to celebrate friends or have brunch.  There is also a great TedTalk on the importance of lady friendships between Jane Fona and Lily Tomlin that is just too funny.

This brunch menu was pretty simple and easy to make in advance so you can enjoy  time with your guests. I like to make some items from scratch and buying others to make hosting easy. Here is the brunch menu breakdown:

Fruit Salad: make your own or grab some from your grocery store to cut your prep time

Spring veggie quiche: I made this crustless in a pie plate to be able to make it less fuss and and quicker to make, one with ham and one without for vegetarians.  It’s great to make just before and serve room temperature. I have made the recipe to its entirety and both are delicious from Five Heart Home.

Mini Bagels with Cream Cheese, Lox and Red Onion: This was easy to put out on a platter and I quickly toasted the mini bagels at once under the broiler on a sheet pan

Chicken Salad Croissant  Sandwiches: I bought mini croissants from the grocery store and placed out with some premade chicken salad, and can been eaten seperately or guests can put together

Mini Parfaits: I had some inexpensive 5 oz glasses from Amazon, Anchor Hocking 5-Ounce Heavy Base Juice Beverage Set, Set of 12. I easily layered store bought granola, plain greek yogurt, and fresh berries. I recommend drizzling a little honey on top of the yogurt and berries to cut the tartness of the yogurt or use regular vanilla yogurt depending on your taste.

Roasted Breakfast Potatoes: These are great for brunch since they are perfect for lunch and breakfast. I chopped potatoes in bite sized pieces, and in a bowl added a tablespoon of olive oil and seasoned to taste with salt, pepper, paprika, parsley, few cloves of chopped garlic and one chopped onion. Mix all together in a bowl and lay out single layer on a sheet pan covered in parchment paper for 30-40 min in a 400 degree oven. I tried to time it where they would be done just before they arrived and left in the oven on warm or you could turn off the oven and keep the door closed until ready to platter for your guests. Sausage and peppers are a great addition as well to add even more flavor

Overall most items don’t need to go in the oven, and the ones that do can be put in before guests arrive. If you missed the last post on this blush pink Galentine’s day decor click the photo below for all the details.
